ALBANIA Fli or Flija (Layered Pancake)

Ingredients

One kilogram of flour; 1lt water; 1 tsp of salt, 200g of butter (melted); and 500g of yogurt.

Preparation and Cooking

  • Mix the flour, salt, and half the water and make a dough and small balls and let them rest. Roll out a dough ball to a thin layer and place it on a baking tray, and brush the layer with a mixture of melted butter and yogurt. Then repeat the process, and make sure to brush the top layer with the mixture as well.
  • Bake the flia for about 2 hours at 170-200oC or until it is golden brown and crispy.

After the flia to cool for a few minutes it can be cut into wedges to serve. Flia is traditionally eaten plain, but it can also be served with honey, cheese or yogurt. It’s a communal dish, often made for large gatherings, as it is labor-intensive and takes a long time to bake. The baking process can become a social event in itself, known as “Flia Day”.
