WOOD FIRE WONDERS

Fig and Goat Cheese Tart (Incir ve Keçi Peynirli Börek)

Ingredients

One sheet puff pastry (thawed); 6 fresh figs (sliced); 1 cup goat cheese (crumbled); 2 tbsp of honey; 1 egg (for egg wash); fresh thyme (for garnish)

Preparation and Cooking

  • Roll out the puff pastry sheet on a lightly floured surface to fit your tart pan.
  • Prick the base of the pastry with a fork, which will prevent it from puffing up too much during baking.
  • Spread the crumbled goat cheese over the pastry base, and arrange the sliced figs on top of the goat cheese.
  • Then drizzle the honey over the figs and goat cheese, and whisk the egg in a small bowl and brush the edges of the puff pastry with the egg wash.
  • Place the dish in the wood-fired oven and bake it at 190-220°C for about 15-20 min, or until the pastry is golden and the cheese is bubbly.
  • Remove the tart from the oven and allow it to cool for a few minutes.
  • Slice the desert and sprinkle with fresh thyme before serving.

Hints and Comments

  • If fresh figs are not available, dried figs can be used after soaking.
