Ingredients
800g of lamb or beef (cut into 2-3cm cubes); 2 medium onions (chopped); 2 bell peppers (different colours); 2 medium tomatoes; 3 cloves of garlic; 1/4 cup of olive oil; 1/4 cup of tomato paste; 1/2 tsp of black pepper; 1 tsp of paprika; 1/2 tsp of ground cumin; 1/2 tsp of dried thyme; salt to taste; Optional: 2 medium potatoes (peeled and chopped), 1/2 cup of green fresh beans and fresh parsley for garnish.
Preparation and Cooking
- In a mixing bowl, combine the cubed meat, chopped onions, bell peppers, tomatoes, minced garlic, olive oil, tomato paste, black pepper, paprika, cumin, thyme, salt; and optional ingredients potatoes, green peas and green beans.
- Transfer the mixture to a sufficiently large clay pot (known as güveç in Turkish and close the lid to seal tightly.
- Place the pot in the wood-fired oven and cook it at around 180-200oC for 1.5-2 hours or until the meat is tender, or cook at lover temperature in slow-cooking mode for a longer period of time.
- Remove the dish from the oven and let it rest for 10min.
- Serve Forest Kebab hot from the clay pot with warm flatbread/pide, rice or bulgur pilaf on the side and garnished with chopped parsley.
