JAPAN Yakitori

Ingredients

One kg of boneless chicken (cut into bite-sized pieces); 1 bunch of spring onions (cut into 2-3cm lengths; soy sauce; mirin (sweet Japanese rice wine); sugar; salt; skewers (if using bamboo skewers, remember to soak them in water for at least 30 minutes before use to prevent burning)

Preparation and Cooking

  • Skewer the chicken pieces and spring onions, alternating between the two.
  • To make the Yakitori sauce, combine equal parts of soy sauce, mirin, and sugar in a saucepan and bring it to a simmer until the sugar is fully dissolved.
  • Place the skewers in the oven as in the other shish kebabs and cook for 10-15 min at 180-200oC, turning occasionally for even cooking.
  • After the first 10 min, brush the skewers with the Yakitori sauce repetatively every few minutes until the chicken is fully cooked and the sauce has caramelized.
  • Once done, remove the skewers from the oven. They can be served with a sprinkle of salt or with extra Yakitori sauce on the side.
