Ingredients
500g of pizza dough; 1/2 cup of za’atar* spice mix; 1/2 cup of olive oil; optional toppings: sliced tomatoes, sliced olives, feta cheese or minced lamb.
* Although the specific blend can vary by region, a recipe for za’atar can be given as: 1 tbsp of dried thyme; 1 tbsp of dried oregano; 1 tbsp of dried marjoram; 1 tbsp of sesame seeds (toasted); 1-2 tsp of sumac; and 1/2 tsp of salt.
Preparation and Cooking
- It is assumed that the pizza dough has been prepared earlier as described in the bread recipies. Therefore, roll out small dough ball into a thin circle on a floured surface.
- Mix the za’atar spice mix with the olive oil to form a paste and spread this paste onto each circle of dough, leaving a small border around the edge.
- Transfer the prepared dough onto a pizza peel, then slide it into the preheated oven at 270-290oC and bake the Manakish for about 5-7 min.
Manakish should cool down slightly before serving as whole or cutted into wedges.
