Ingredients
500g of fresh mussels (cleaned and debearded); 1/4 cup olive oil; 1 lemon; 3 cloves of garlic; 1 tsp of dried oregano; 1/2 tsp of paprika; 1/4 tsp of red pepper flakes (optional, for heat); salt and pepper to taste; Optional: cherry tomatoes, bell pepper, and onion chunks for skewering; Metal or wooden skewers (wooden skewers should be soaked in water for 30 min).
Preparation and Cooking
- Combine the olive oil, lemon juice, minced garlic, oregano, paprika, red pepper flakes (if using), salt, and pepper in a bowl and mix to create a marinade, and add mussels and coat well. Then cover the bowl and refrigerate for 30-60 min.
- Thread the marinated mussels onto the skewers and cook them as described above for Calamari Shish but few minutes less. Then remove and rest them.
- The serving is identical to Calamari Shish.
Hints and Comments
- Some recipes may include thyme, basil, or cumin for added flavour.
