Ingredients
500g of dough (bread dough can be used); 4-5 potatoes; 1 onion (finely chopped); 100g of cheese (any kind prefered); salt and pepper to taste; and1 egg for egg wash.
Preparation and Cooking
- Peel and boil the potatoes until they are soft and mash them and let them cool.
- For fillings: Sauté the onion until golden and mix it into the mashed potatoes, and add the cheese, and season with salt and pepper.
- Divide the dough into small balls and roll each one out into a circle. Then add a spoonful of the potato filling in the center of each circle, and fold the dough over and seal the edges with the help of water to form a half-moon shape.
- Brush each formed dough with the egg wash and place them in a baking dish and bake them in the wood fired oven for 15-30 min at 180-200oC until achieving golden brown colour, and cool slightly before serving.

- Its serving method depends on its filling, which can be savory (the above recipe) or sweet (which can include apples, cherries, or sweet cheese dasted with powdered sugar, served with a dollop of cream or with a side of ice cream).
